I'll be the first to admit that today's lunch was a bit.... different. But it was healthy and delicious so I don't care!
Sole (fish), arugula and beet green salad, young coconut meat (drank the coco water on the side), and raw beet root. It looks odd but it follows the Perfect Portions (see www.mycorebalance.com/resources) pretty well. Half salad, about a quarter protein, about a quarter starch (the beet root), and I added some extra fat with the coconut. Enjoy!
