This took me less than 3 minutes to assemble. I'll be taking it to work tomorrow, and when I get there I'll mix it all up. Pictured (clockwise from top-left): kalamata olives, spaghetti squash with tomatoe sauce and meatballs, mung bean sprouts, green cabbage, kale, spinach, shredded carrots, and in the middle is 3 spoonfuls of Casa Sanchez medium salsa for some extra flavor. NUTRITION TOTALS: 500 calories, 75 g carbs, 20 G protein, 15 g fat. 25 g fiber.
